Finally had time to do tomatoes! A friend helped us find eight 25lb boxes of them at a good price. What a blessing!
We did one gallon of dried tomatoes...
And canned over 50 quarts of whole tomatoes... This was the blanching process.
Cooling them down quickly in ice water...
And peeling them!
There they are, ready for jars.
And there they are, freshly canned and cooling on the table!
Next it was time to do salsa--chopping everything was a two-man job.
Steaming the veggies (onions, celery, and green and red bell peppers)
Mixing the veggies and herbs into the fresh peeled and chopped tomatoes
Mmmmmmmmmm... smells YUMMY!
Doesn't it look tasty?
Project completed! Salsa is canned and ready for the winter!
the bad tomatoes went into the compost pile, to feed the mushrooms (but we don't eat those!)
Another trip! This time to North Carolina for a visit with a friend, a speaking appointment at church, and a wedding!

On Sabbath afternoon we had a lovely walk down a nature path. This lake was perfect for a photo!
