Finally had time to do tomatoes! A friend helped us find eight 25lb boxes of them at a good price. What a blessing!
We did one gallon of dried tomatoes...
And canned over 50 quarts of whole tomatoes... This was the blanching process.
Cooling them down quickly in ice water...
And peeling them!
There they are, ready for jars.
And there they are, freshly canned and cooling on the table!
Next it was time to do salsa--chopping everything was a two-man job.
Steaming the veggies (onions, celery, and green and red bell peppers)
Mixing the veggies and herbs into the fresh peeled and chopped tomatoes
Mmmmmmmmmm... smells YUMMY!
Doesn't it look tasty?
Project completed! Salsa is canned and ready for the winter!
the bad tomatoes went into the compost pile, to feed the mushrooms (but we don't eat those!)
Another trip! This time to North Carolina for a visit with a friend, a speaking appointment at church, and a wedding!
The Smoky Mountains are so pretty!
Kristina loves tunnels...
Another tunnel...
Inside :)
On Sabbath afternoon we had a lovely walk down a nature path. This lake was perfect for a photo!
Poison Ivy... watch out!
Our friend, Mark, and his parents.
The wedding was a beach wedding, but we missed a turn and arrived at the end of it.
The reception was really nice! This is us with the happy Bride and Groom, Ben and Jessica.
After the wedding, we decided to spend some time at the beach.

Daniel and Lucas swam while Kristina rested and took pictures.
Coming back home through the Smokies--this time it was blue skies!
We had to get another canoe afternoon in, and this time the weather was cooler.
We met Daniel's parents at fishing creek. Lucas was in the canoe with Daniel's Dad, and Mom rode with us in the other canoe.
Smile!
The water was SO calm
The ride back was easier, because we just went with the current. Daniel kicking back and relaxing.
Daniel's Mom took this picture for us.
Beached Canoes ready for loading.
Headed to a picnic site for lunch.
Yummy meal :)
Sarah came over for two days to help Kristina with the cooking class.
They made two batches of wheat pumpkin bread and a batch of gluten free pumpkin bread. Yummy...
